Clyde River Oysters, Local Producers and the Perfect Winter Wine Pairing
Winter is when the Clyde River truly comes into its own.

Rising in the mountain ranges south-west of Batemans Bay before winding through forests, Yuin Country and pristine national parks, the Clyde River creates one of Australia’s most celebrated oyster-growing estuaries. The unique meeting of fresh and salt water produces oysters renowned for their creamy texture, delicate sweetness, gentle brininess and remarkable umami, making them a favourite of chefs and seafood lovers across the country.

At Catalina, we’re proud to support local producers who have spent generations perfecting their craft. Our oysters are sourced fresh through our partners at The Farm Gate on Wray Street, bringing the very best of the Clyde to your table.

The connection between Catalina and the Clyde River runs deeper than the menu. The golf course itself sits on ancient oyster-shell sand, with natural shell still found throughout the bunkers, a reminder that this remarkable estuary has shaped both the landscape and the local community for generations.

This winter, our Secret Sommelier celebrates that local heritage with a pairing designed for the season.

Fresh Clyde River oysters, served with Champagne Mignonette, are matched with Pikes ‘Luccio’ Fiano from the Clare Valley.

While many wine lovers naturally reach for Sauvignon Blanc, Fiano is one of Australia’s great food wines. Bright notes of Nashi pear, citrus and white peach are supported by a beautifully textured palate that complements the oysters’ natural sweetness without overpowering their delicate flavour.

The result is a pairing that is fresh, balanced and unmistakably Australian.

The featured wine comes from Pikes Wines, the family-owned Clare Valley winery that will host Catalina’s Winter Degustation this August. Although this year’s event has sold out, our Secret Sommelier series offers guests the opportunity to experience Pikes Wines throughout the season as part of our winter dining menu.
